Sambar vadi also known as kothimb vadi in maharashtra is very famous indian cousins especially all over maharashtra region.
It was actually dish inspired from olden days of my village ,where we are in winter used to grow coriander leaves at our farm ,which is a main ingredient in this recipe. As name suggest sambar vadi is named after coriander or sambar in marathi or kothimb.
It is very delicious recipe made from simple ingredients available at every home.

Serving – 4 persons
Preparation time – 40 mins.
Ingredients :-
For dough preparation
1. Rice flour – 100 gm
2. Gram flour – 100 gm
3. All purpose flour – 100 gm
Dough preparation method :-
A) Mix all the flours in a bowl and add 1/2 tbsp of salt into it.
B) Add slowly 4-5 tbsp of hot oil onto this flour for more crispness during frying.
C) Mix all the ingredients together with slowly adding water into it & make a chapati like dough.
D) Kept aside this dough till time prepare masala.
For masala filling preparation :-
1) Chopped coriander leaves – 150 gm
2) Grated coconut – 100 gm
3) Grinded roasted peanuts -100 gm
4) poppy seeds – 10 gm
5) garam masala – 1 tbsp
6) sabji masala – 1tbsp
7) coriander powder -2 tbsp(optional)
8) Turmeric powder – 1 tbsp
9) fennel seeds -1 tbsp
10) cumin seeds – 1 tbsp
11) mustard seeds – 1 tbsp
12) ginger garlic paste -2 tbsp ( optional)
13) Chopped green chilli’s – 4-5
14) salt to taste
15) vegetable oil for frying.
Preparation method for masala filling :-
A) First heat oil in a pan ,add cumin,fennel & mustard seeds.
B) As they starts to crackle add Chopped green chilli’s ,Chopped onions and saute for 2-3 mins.
C) After onions are golden ,add all dry ingredients viz.turmeric powder, coriander powder,garam masala,sabji masala ,salt to taste & saute for a minute.
D) Now add grated coconut, roasted peanuts, poppy seeds & cook them well.
E) At last add Chopped coriander and cook well for 3-4 minutes.
Your masala for filling is ready ,take out in a bowl and allow it to cool.
F) Take a small portion of dough and make small chapatis .
G) On top ,layer the garam masala mixed with water.
H) After add a portion of masala and fold the sides with the help of water .
I) Take this sambar vadi and dip fry in medium heated oil till it becomes golden brown.
YOUR SAMBARVADIS ARE READY, SERVE HOT WITH SAUCE OR CHUTNEY.
